2TBSP ICING SUGAR
2TBSP CORNFLOUR
25GR GELATINE POWDER
125ML HOTWATER
3 DROP ORGANIC FOOD COLOURIN (PINK)
500GR GRANULATED SUGAR
250ML COLD WATER
2 EGGS WHITES
Mix the icing sugar and cornflour and sift a little into a baking tray to coat it.
Dissolve the gelatin in water in a small bowl add the colouring.
Put the sugar and water in a pan and heat the sugar to 122*C
whisk the egg until stiff.
Take the boiling syrups off the heat and mix with gelatin.
Then gradually beat the syrup into the beaten eggs, the texture should be thick and creamy,
put all on tray and leave in a cool place,
then cut into a squares,
coat each squares in the icing sugar and cornflour mix.
