British Recipe 🥣🎄
Pre heat oven 180*C
3kg organic Gammon,
2 sticks celery chopped,
8 black peppercorns,
2 bay leaves
4 springs thyme,
parsley stalks
16 cloves
4 tbsp. runny honey,
1 1/2 tbsp. English mustard
Place the gammon, vegetables in a pan, cover with cold water,
boil and then simmer for 1 1/4 hours,
then lift the ham onto a board to cut away the skin
smooth layer of fat, score the fat with a sharp knife (first one direction and then the opposite),
stud the ham with cloves (at the centre of each diamond shape),
transfer the ham to metal roasting tray,
mix together the honey & mustard for the glaze,
drizzle the glaze evenly over the fat,
roast in a oven x 45′
