Clams with Sausage


1 kg Clams
75gr Sausage chopped
1tbsp oil extra virgin
1 Small onion chopped
1 Garlic clove chopped
Large sprig of thyme
100ml sherry

Crusty bread

Put the clams on the bowl under cold water for 5 minutes.
In saucepan cook the chorizo with extra oil for 6 minutes, remove the chorizo, then add the onions, garlic, thyme, sprig, and fry for 10 minutes, increase the heat and add the
clams and chorizo back, pour sherry and cover with a lid, cooking for 3 minutes. When the clams is open.
Serve with crusty bread.

Carrot cake


120ml vegetable oil
60gr caster sugar
60gr brown sugar
2 eggs
120gr self-raising flour
1/ tsp salt
1/2 tsp ground cinnamon
1/4 ground nutmeg
1/2 tsp baking soda
1/4 tsp baking powder
150gr 2 grated carrots
1/2tsp vanilla extract
50gr chopped walnuts
50gr sultanas

For the Icing:
50gr soft salted butter (softly)
125gr cream cheese
350gr icing sugar

Pre- heat the oven 180 C
In a blow mix the dry ingredients except the walnuts.
In a second bowl add the eggs,oil,vanilla, grated carrots and mixed.
Then combine both mixture and add the walnuts, spread the mixture in bake tin (medium circle) and bake for 15 minutes until is dried.

Now, preparing the Icing:
In a bowl add the cream cheese and butter and mix well for 3 minutes then add the icing sugar and mix well for 3 minutes more. Put the Icing in the middle of your small cake
and cover it the top, to decor sprinkle walnuts or grated carrots
