Starry Stack


300gr unsalted butter soft
300gr caster sugar
2 small eggs beaten
1 teaspoon vanilla extract
a pinch of salt
600gr plain flour
1 kg white sugar paste icing
apricot jam
edible gold and silvers stars

Preheat the oven 180*C and lightly grease baking sleets.
Cream together the butter, sugar, add eggs, vanilla and salt, mix all well.
Gradually add the flour, divide dough into 2 balls, wrap for one hour.
Roll the dough out a lightly floured work surface to a thickness of 4 mm.
Dip cookie cutters in flour and cut 2 cookies with each size.
Bake the cookies on the middle shelf for about 12 minutes or until is golden.
When cool, brush (each cookie) with a little apricot jam.
Roll out the sugar paste icing and cut a piece for each cookie star and start building the tree.
Assemble the tree, starting with the large star first, dab jam on the points and stick gold star.
When building the tree, keep turning it to check it straight. Decor with a little gold star your starry stack.
