Mulled Wine


750ml bottle red wine
60gr demerara sugar
1 cinnamon stick
light grating of fresh nutmeg
2 star anise
1 orange halved
60ml gin
start anice + slice orange to decorate each glass

Put the wine, sugar, spices and orange into a large saucepan.
Heat gently until the sugar has dissolved.
Taste and remove from the heat.
Taking a small sieve strain the mulled into heatproof glasses.
