Cranberry and Pistachio Biscuits


350gr plain flour
2 tp baking powder
2 tsp mixed spice
250gr caster sugar
3 eggs
2 zest of orange grated
150gr dried cranberries
100gr shelled pistachios (chopped)
50gr blanched almonds (chopped)

Preheat oven 180*C,
line 2 trays with baking powder, sugar, spices into a large bowl and mix,
stir the eggs and orange, until the mixture start to clump together,
next add the fruit and nuts and bring the dough together with your hands,
turn out the doughy onto a floured surface and knead briefly,
break into four pieces and roll into shapes of 25 – 30 cm long,
slightly flatten each one, then place on the frays,
bake in the oven for 30′ until the dough has risen and feels firm to the touch,
but has not browned,
remove from the oven and leave to cool,
cut the biscuits into slices 1 cm and bake for 15′ more until are dry and golden colour,
you can do 60 pieces!
